Muffin Wednesday: Apple Cinnamon

It's almost the end of the school year... just a couple more Muffin Wednesdays to go.

Today's creation from the book was Apple Cinnamon Muffins. Simple, with simple ingredients. Perfect.
2 c flour
1/2 c sugar
3 t baking powder
1/2 t cinnamon
1/2 t salt
1/2 c butter or margarine
1 large apple, peeled and diced (I did not peel and shredded in my food processor to speed it up)
1/4 c finely chopped walnuts
1 egg
2/3 c milk
1 t cinnamon
1 T brown sugar (the CE2 kitchen was out so I subbed white sugar)

Preheat oven to 425 degrees and grease your muffin tin.

1. In a large bowl, sift together the flour, 1/2 c sugar, baking powder, 1/2 t cinnamon and salt. Cut in the butter. Set aside 1/4 c for the topping.

2. Add the apples and walnuts.

3. In a smaller bowl, beat egg. Add milk and blend well. Add to flour mixture and stir just until blended. Batter will be lumpy.

4. Spoon batter into prepared muffin tin, filling two-thirds full. Add remaining cinnamon and brown sugar to reserved topping mixture. Sprinkle over batter.

5. Bake in preheated oven for 15 minutes.

These smelled like Heaven! They were very moist and dense - yummy!

I doubled the recipe and made 30 muffins. Everyone loved them. Andy said they were the best I'd made in a while. Iggy ate four.
